ABITA

ANDYGATOR: 4/6

Abita Andygator®, a creature of the swamp, is a unique, high-gravity brew made with pilsner malt, German lager yeast, and German Perle hops. Unlike other high-gravity brews, Andygator® is fermented to a dry finish with a slightly sweet flavor and subtle fruit aroma. Reaching an alcohol strength of 8% by volume, it is a Helles Doppelbock. You might find it goes well with fried foods. It pairs well with just about anything made with crawfish. Some like it with a robust sandwich. Andygator® is also a good aperitif and easily pairs with Gorgonzola and creamy blue cheeses. Because of the high alcohol content, be cautious — sip it for the most enjoyment. ABV: 8.0%

DOGFISH HEAD

ALTERNATE TAKES #7: 1/6

DOGFISH HEAD SPIRITS

ROASTED PEANUT VODKA: 750L

Batch-distilled using our scratch-made Analog Vodka, we soak the distillate with unsalted whole roasted peanuts and vanilla beans for two days before distilling. We then take the finished Vodka and macerate it again with more peanuts and a touch of local honey.

COMPELLING GIN: 750L

Gin is simply vodka distilled with juniper berries and other botanicals. And what better base to start with than our very own scratch-made Analog Vodka. We pot distill using a gin basket burting with a citrus-forward botanical mix, Bright orange, lemon and lime peel take the lead, with the juniper berries rounded out by flavors of cinnamon, green cardamom, coriander seed and kaffir lime leaves. Enjoy peppery citrus zest flavors followed by baking spices and a lemon-lime finish.. Bright & citrusy, this highly mixable gin transforms a few go-tos such as Gin & Tonics and Bloody Marys, or as a back bone to the classics.

ANALOG VODKA: 750L

Analog Vodka isn’t your average Vodka. Made from a base of malted barley that we mill in-house, right alongside our off-centered ales. After the starches in the grain are converted to sugars, the worst is sent to the cellars, where our proprietary ‘Doggie’ ale yeast converts the sugars to an alcohol target of 7.6%.

BARREL HONEY RUM: 750L

It all starts in the Brewhouse, right alongside our off-centered ales. Unlike Analog Vodka which uses 2-row barley as its sugar source, rum must be made from cane sugars. We choose Grade A fancy molasses as our sugar source. We like molasses rather than cane juice or table sugar because it results in a richer rum spirit, better suited for aging. On the way to the cellars we add our proprietary ‘Doggie’ yeast – we chose this because the yeast imparts fruity esters, which add a ripe banana character.

SONIC ARCHEOLOGY: 750L

Sonic Archeology is a melding of Dogfish Head whiskey, rum and apple brandy, with honey and real lemon & pomegranate juices to create a totally original drinking experience.

HALF ACRE

NAVAJA: 6/4C, 1/6, 1/2

Navaja was the first Double IPA we brewed. It became a brewery favorite partly due to its potent and resinous attributes, but also due to its psychoactive impact. Sometimes you gently tap, sometimes you hammer. Spicy, herbal, piney, tropical, cut grass, sweet marmalade, corn bread, biscuity, boozy effect but not flavor, really dry. ABV: 10.0%

DAISY CUTTER: 2/12C

Daisy Cutter Pale Ale is one of the first beers we brewed at our brewery on Lincoln Ave.  It began as a special release bomber beer, but caught fire both in and outside the brewery. At the time, 2009, there were some local pale ales that hit with natural power, but not many.  Daisy Cutter’s lush and dank characteristics steadily carved out a place within the Chicago brewing landscape. Today, Daisy Cutter is a call brand that we continue to keep raw and relevant. Blended pine, citrus, papaya and mango. Dank. Apparent biscuit, lingering, obscenely dry. ABV: 5.2%

SMOKING GULL: 1/6

Brewed with Pilsner, Vienna, and flaked oats, ridden hard with Citra and Mosaic hops, touching on a bunch of mod slants on packing hop luster.

After a few years of home brewing in our garage, my brother and I decided we should open a brewery so that we could share our beer. In 2009 we started with a one barrel system and worked on a single recipe, over and over, until Peeper was born. And now we have enough to share. Cheers! ABV: 5.5%

WEEK OF MARCH 18th

ALLAGASH

COOLSHIP RESURGAM: 1/6

Coolship Resurgam is brewed with Pilsner malt, raw wheat, and aged hops. The beer is cooled overnight using outside air temperature in a traditional, large shallow pan known as a coolship. During the cooling process, naturally occurring microflora from the air inoculates the beer, and in the morning, it is transferred into French oak wine barrels where the entire fermentation and aging takes place. Coolship Resurgam is a blend of this one-, two-, and three-year old spontaneously fermented beer. The finished beer has aromas of apricot, lemon zest, and candied fruit. Notes of tropical fruit and flavors of funk lead to a clean, tart, and dry finish. ABV: 6.3%

LITTLE SAL: 6/12 | 1/6

ABV: 6.5%

COOLSHIP RED: 1/6

This blend of spontaneously fermented beer is aged on local raspberries. We begin brewing Coolship Red with Pilsner malt, 40% raw wheat, and aged whole-leaf hops. The unfermented wort is then transferred to a large shallow pan called a coolship, which allows the hot wort to mingle with wild yeast and souring microflora in the Maine air. After fermenting and aging in oak wine barrels for over two years, we add raspberries and let it rest for an additional four to five months. The finished beer is bright red in color with an aroma of raspberry and oak. Its raspberry-forward flavor is balanced by notes of light funk, apricot, and a tart, dry finish. ABV: 6.7%

BARREL & BEAN: 6/4 | 1/6

Barrel & Bean starts its life as our Tripel—a Belgian-style golden ale. We age that beer in bourbon barrels for just shy of two months, before blending it with cold-brewed coffee from Speckled Ax, a Maine coffee roaster. The sun-dried Ethiopian beans in the coffee are known for their stone fruit and dark berry flavors. The finished beer features rich notes of caramel, bourbon, and coffee. ABV: 10.0%

THE BRUERY/BRUERY TERREUX

SOUR IN THE RYE: 1/6

Sour in the Rye is an American wild ale. A challenging beer to brew due to the substantial amount of rye malt, but you’ll be glad we took the time. The character of the rye asserts itself with clove and pepper in the aroma and flavor, and contributes a full body not generally found in sour beers. Pleasantly sour with notes of tart cherry, rustic earth and vanilla from barrel aging. ABV: 7.7%

MISCHIEF: 6/4C | 1/6 | 1/2

Mischief is a hoppy Belgian-style golden ale. This wickedly good golden ale is fiendishly dry-hopped with American hops to add a layer of complexity and mystery to its fruity, dry Belgian-style character. Citrus and resin diabolically combine with ripe melon, pear and slight peppery spice in a precariously effervescent mixture. Enjoy it, but you’ll want to keep an eye out. Gold Medal – 2016 Great American Beer Festival, American-Belgo-Style Ale. ABV:  8.5%

OUDE TART: 1/6

Oude Tart is a Flemish-Style Red Ale aged in red wine barrels. It’s pleasantly sour with hints of leather, dark fruit and toasty oak. While this is one of the more classic beer styles that we make, it’s not a style that you can find too often in the United States. Originating in style from the Flanders region of Belgium, near the French boarder, this dark, sour ale has roots deep in brewing history and predates most of the ales that have become popular in contemporary culture. We’re doing our best to keep the tradition alive by brewing and aging this beer here on the west coast. ABV: 7.7%

WHITE CHOCOLATE: 12/25 | 1/6

This bourbon barrel-aged wheatwine-style ale made a fanciful trip to the chocolatier and returned with luscious flavors of white chocolate – hence the name. White Chocolate is a rewarding summons to the senses – beginning with its golden appearance and finishing with warming, white chocolate-like flavors. This is accomplished by adding cacao nibs from TCHO and fresh vanilla beans to our bourbon barrel-aged wheatwine-style ale, complimenting the rich notes of coconut, honey, caramel and vanilla from extensive barrel-aging. ABV: 14.0%

OR XATA: 1/6 | 1/2

Horchata is a traditional, sweet, milky drink originating in Spain and Latin America that has become quite popular in Southern California, particularly with Mexican cuisine. Our homage to the traditionally non-alcoholic drink is a blonde ale brewed with a heavy dosing of rice, cinnamon and fresh vanilla beans along with lactose for a little extra creamy character. These ingredients meld together to create a taste and experience that hints at horchata, but it’s much more than that. The flavor is hard to describe, but for those who know it, you know you love it. ABV: 7.1%

SANS PAGAI: 12/25

Sans Pagaie is our take on the Belgian-style kriek, which is a sour blonde ale aged in barrels with cherries. Sans Pagaie translates from French to “without a paddle” (see what we did there? Kriek/”without a bottle”….. hello, anyone out there?). ABV: 5.8%

FRUCHT PASSION FRUIT: 12/12 | 1/6

We’re totally Frucht around here. In fact, we may just be filled to the brim, with excitement, that is. Our threshold is 250 BBLs, to be more precise. That’s the total capacity of each new oak foeder at Bruery Terreux. One is dedicated exclusively to Frucht, our new series of fruited Berliner Weisse-style beers. Known for a tart flavor profile and traditionally low ABV, our new German-style wheat beer gains even more funky notes and natural earthy-woodiness from its fermentation in the large oak foeder vessel. ABV: 4.3%

OUT OF THE LUNCHBOX: 12/25

TART OF DARKNESS CURRANT: 12/12

ORCHARD WIT: 12/12 | 1/6 | 1/2

This is how a beer from our backyard in Orange County should taste: refreshing, crisp and original. Orchard Wit is a tart wheat beer, brewed with orange zest and coriander, and aged in an oak foeder for several months. It’s designed to showcase the culture of our farmhouse-style brewery through maturation in oak and fermentation with several yeast strains, namely Bavarian Wit, Belgian Wit and French Saison yeast, and our house souring culture. It’s a combination that’s fresh with subtle complexity, balancing the classic, spiced and fruity characteristics of a Belgian-style wit with the soft – and wild – touch from oak. ABV: 5.7%

SAISON ARDENNES: 12/25 | 1/6

Saison Ardennes is a tart saison, hand-crafted to embody the dependable, spirited nature of a classic Belgian-style farmhouse ale. This includes a crisp malt profile, rustic floral and spice notes and lively carbonation. Our rendition expresses further depth and character from its fermentation and maturation in a large oak foeder. Saison Ardennes will continue to pleasantly evolve in the bottle, thanks to the presence of wild yeast added for bottle conditioning. ABV: 6.3%

This is the crowning achievement of our Anniversary series, a beer commemorating our 10 year anniversary by blending in special barrel-aged reserves from each year leading up to it. ABV: 16.3%

MINOR MINER: 12/25

We teamed up with our friends at Collective Brewing Project to create Minor Miner Grisette, a grisette-style ale aged in oak foeders with orange blossom and calendula flowers, inspired by traditional grisette beers enjoyed by industrial miners after a long day of labor. Though the environment of beer consumption has changed, this easy-to-drink beer still hits the spot when looking for a refreshing beer at the end of the day. ABV: 5.0%

MODERN TIMES

FORTUNATE ISLANDS: 6/4C | 1/6

Fortunate Islands combines the bangin’ hop aroma of an über-tropical IPA with the crisp, deeply quenching drinkability of a killer pale ale. We achieve this magical result by starting with a mild, nutty malt backbone, then dry-hopping the bejesus out of it with Citra and Amarillo hops. Restrained bitterness and vibrant notes of mango, tangerine, and passionfruit combine to form a sessionable crusher of mind-bending proportions. It tastes like wizards. ABV: 5.0%

BLACK HOUSE: 6/4C

It’s so great that you like coffee. I just love that about you. Speaking of which, you’re holding an oatmeal coffee stout positively redolent with coffee aroma and flavor. Taste the persnicketiness! ABV: 5.8%

SCHLAFLY

DOUBLE BEAN BLONDE: 4/6

Darkness and romance lurk beneath the golden exterior of this ale that combines the prominent flavors and aromas of coffee and the smooth richness of chocolate. We use simple, straightforward malts and hops to keep the focus on the notable characteristics of the featured ingredients. After the beer is fermented, we let it rest on cocoa nibs sourced from Ghana—one of the world’s largest chocolate exporters. In the final stage of production we add a cold coffee toddy made from filtered water and finely ground beans roasted by St. Louis’ own Kaldi’s Coffee and sourced directly from the Shiwanda Estate in Africa’s southeastern Tanzania. STONE

MOXEE GOLD: 4/6C

Behind every great beer are amazing stories of all the people, places and ingredients that culminate in what you have in your hand. The Stone Farm to Can Series is our heartfelt tribute to the dedicated farmers who cultivate the hops that help bring our beers to life. Each beer in this series features hops grown at a single specific farm as our way of paying homage to their harvest. Many of these growers breed and develop their own varieties, like CLS Farms in Moxee, Washington did with El Dorado hops, named for the mythical hidden City of Gold. Moxee lies nestled in Yakima Valley, the very real paradise of hop production in the American Pacific Northwest. Stone Moxee Gold IPA is loaded with Centennial and of course El Dorado hops, all sourced from the fruitful bines of CLS Farms. The valley itself may be mostly green, but its bounty of hops are as good as gold. ABV: 7.0%

So whatever’s in your way should just Steep Aside. ABV: 5.7%

WEXFORD

IRISH CREAM ALE: 6/4/14.9

Wexford Irish Ale comes in a can with a widget which releases nitrogen when the beer is opened. Nitrogen is usually reserved for stouts, but Wexford uses the nitrogen to give the beer a creaminess and long lasting, thick head complemented by a soft orange tint and a caramelized, toffee like nose. This beer should be savored so as to enjoy the sweet and fruity aspects, which are more prevalent here than in most examples of the style. Additionally, the hop profile is very low and almost nonexistent in terms of bitterness. ABV: 5.0%

TWO ROADS

ESPRESSWAY STOUT: 4/6

In a process unique to Two Roads, we mixed a locally-roasted Ethiopian/Sumatra blend of beans with a rich oatmeal stout under pressure (like espresso but without the steam) using our German-built “Brewnik” device. The mixture is steeped for several days resulting in a true, cold-brewed coffee stout. Hop on the Two Roads Espressway! ABV: 6.5%

DRY & MIGHTY: 4/6C

YARDS

RIVAL: 1/6

When it comes to full-bodied IPAs, Rival’s complex yet drinkable flavor profile is in a league of its own. Rival recipe starts with a base of Pale Crystal and rye malts, and Bravo and Nugget bittering hops. Then whole flower Chinook hops go into the hopback, extracting that signature pine character. Finally, Rival is dry hopped with Centennial, Citra, Simcoe and Columbus hops, giving this amber-colored IPA a complex citrus profile. Rival IPA’s new look pays homage to old school Philly team colors, including a subtle reference to Veteran’s Stadium—the former battleground of so many of our city’s historic sports rivalries. ABV: 6.2%

GOLDEN HOP: 4/6

Golden Hop roars with tropical notes of tangerine, mango, and grapefruit from Mosaic, Cascade and Amarillo hops. Columbus in the hopback adds a bright floral and citrus undertone, complementing this light-bodied IPA’s vibrant hop bouquet. Wheat malt provides a golden color and Belgian yeast shapes the crisp, clean feel. ABV: 6.0%
